Summer flavors
Ingredients. Kg 1.500 of zucchini 600 gr. Of mixed minced meat 2 cloves of garlic a tuft of parsley a sprig of fresh mint a little bit of wine 2 slices of bread 70 of grated pecorino cheese 2 eggs Salt as you desire How to do the cooking: Wash well the zucchini. Cut the two ends, and then divide them into half. Boil some salted water and cook them for 5 minutes. Using a spoon dig out the pulp of the zucchini, by so doing you obtain zucchini having the shape of a boat, which we are going to fill up. Wash the mint and the parsley and put them in a blender together with the cloves of garlic, the pulp of zucchini, and the sweet provola cheese. Soften the slices of bread in the wine. Take a bowl, put inside it the minced meat, the squeezed bread from the wine, the eggs, the pulp of the minced zucchini and all the other ingredients. Add salt and knead everything well. Fill the empty shells of zucchini, Bake in the oven at the temperature of 170°x 1515/20 minutes
